Ravaiya With Green Beans

Ingredients

  • 200 grams fresh beans (washed and crushed)
  • 8 to 10 chillies (paste)
  • 1 big bunch of coriander leaves (finely chopped)
  • 50 grams grated coconut
  • 4 tea spoons sugar
  • 2 tea spoons garam masala
  • 4 table spoons dhana jeera powder
  • Oil
  • ½ tea spoon mustard seeds
  • 1 tea spoon sesame seeds
  • ½ tea spoon red chilli powder
  • ¼ tea spoon turmeric powder
  • A pinch asafetida
  • ¼ tea spoon soda
  • 250 grams brinjal (ravaiya)
  • 4 big potatoes (peeled and cut into long pieces)
  • 3 capsicums (cut into long strips)
  • 1 lime
  • Salt to taste

Instructions

  • Mix all the masalas in coriander leaves. Wash and make cuts in the ravaiya from the top. Do not separate the pieces.
  • Fill the masala in the ravaiya.
  • Heat enough oil in a kadhai. Add sesame seeds, mustard seeds, red chilli powder, a little turmeric powder, asafoetida and citric acid. Add a little water. When the water starts boiling add all vegetables. Add the additional masala. Cook on a low flame. When the vegetables are cooked, add a little lime juice.
