Baigan Bharta

Ingredients

  • 250 grams large brinjal (bhutta)
  • 2 table spoons oil
  • 2 tea spoons ghee
  • 1 tea spoon cumin seeds
  • A pinch asafetida
  • ¼ tea spoon turmeric powder
  • 1 tea spoon red chilli powder
  • 200 grams onions
  • 10 cloves garlic
  • 100 grams tomatoes
  • 1 lime
  • 1 table spoon ginger-chilli paste
  • 1 tea spoon garam masala
  • 1 tea spoon finely chopped coriander leaves
  • Salt to taste

Instructions

  • Apply a little oil to the brinjal. Put it directly on the gas flame. Roast it. Keep on turning it at frequent intervals. When the brinjal is roast properly, remove it from the flame. Peel and mash it well.
  • Heat a little oil or ghee in a kadhai. Add asafetida, turmeric powder, red chilli powder, spring onions (finely chopped) and garlic (finely chopped). Sauté for a few minutes.
  • Add tomatoes (finely chopped) and mashed brinjal, salt, lime juice, ginger chilli past and garam masala. Fry for a few minutes. Decorate it with chopped coriander. Serve hot.
