Tomato Ketchup

Ingredients

  • 5 kg tomatoes
  • A small piece of beetroot
  • 100 grams ginger
  • Garam masala (cinnamon, cloves, pepper, mace, etc.)
  • 400 grams sugar
  • Acetic acid
  • Sodium benzoate salt to taste

Instructions

  • Select sound ripe tomatoes of deep red colour with less water and more pulp. Chop the tomatoes and steam them in the pressure cooker.
  • Put them in a sieve and not cut part on the top. Cut the beetroot into 2 pieces.
  • Add a little water to the pressure cooker and cook for some time without the whistle until the skin of the tomatoes softens. Remove it from the flame. Place the sieve in a dish in a slanting position to remove the excess amount of water from the tomatoes.
  • Blenderise the tomatoes and strain the pulp. (prepare soup from the water extracted from the tomatoes.)
  • Tie the ginger paste and garam masala into a thin muslin cloth separately. Put these bundles in the tomato pulp extracted.
  • Add the sugar and mix well. Cook until the mixture thickens. Squeeze and remove the bags. The garam masala from the bag can be used in various other salty preparations.
  • Add the acetic acid and sodium benzoate. (For 5 kg of tomatoes ready made packets of preservative are available in the market.) add salt and cool the ketchup. Fill in a dry sterilized bottle.
  • For extraction of juice
  • Blenderised all the fruits of which juice has to be extracted. Strain the pulp. Add water pepper powder, salt and black salt powder to it. Add enough sugar. Various fruit juices can be mixed with limca, thumps up, coca cola etc. serve chilled.
