Vegetable Handvo
Ingredients
- 500 grams potatoes (boiled, peeled, grated)
- 500 grams yam (boiled, grated)
- 500 grams peas (boiled)
- 500 grams carrots (cut into pieces and then boiled)
- ams groundnuts (powdered)
- tea spoons ginger-chilli paste
- tea spoons sugar
- A little citric acid or 4 tea spoons lime juice
- ½ tea spoon turmeric powder
- tea spoons garam masala
- 4 table spoons coriander leaves (finely chopped)
- 4 table spoons grated coconut
- Oil
- 1 tea spoon mustard seeds
- ¼ tea spoon asafetida
- 2 tea spoons sesame seeds
- 50 grams toast powder
- Salt to taste
Instructions
- Keep all the vegetable in separate bowls.
- Add groundnuts and all the masala to all bowls.
- Add salt, sugar, ginger–chilli paste, lime juice or curds, turmeric powder, garam masala, chopped coriander leaves and grated coconut to all. Mix properly.
- Take four dishes of the same size. Add the vegetables and seasoning to them.
- Now first place the yam layer then the peas layer, then the carrots layer and lastly the potato layer.
- Sprinkle toast powder on the top. Add the seasoning again on top. Bake in an oven or in cooker without using the weight.
