Ragada
Ingredients
- 250 grams dry peas
- Oil
- ½ tea spoon mustard seeds
- 1 tea spoon sesame seeds
- A pinch asafetida
- 3 onions
- 10 cloves garlic
- 2 tomatoes
- 1 tea spoon ginger –chilli paste
- 1 tea spoon garam masala
- 1 lime
- 1 table spoon sugar
- 1 tea spoon red chilli powder
- ½ tea spoon turmeric powder
- 1 tea spoon amchur powder
- 2 table spoons jiggery
- 2 potatoes
- 2 table spoons finely chopped coriander leaves
- Garlic chutney
- Coriander chutney
- Dates chutney
- 1 carrot
- 1 beetroot
- Salt to taste
Instructions
- Boil the peas. They should remain whole.
- Heat 2 table spoons oil in vessel.Add mustard seeds and onions. Fry for 3-4 minutes. Add the garlic past and tomatoes. Fry again for some time.
- Add all masalas and peas.
- Add boiled potatoes. Boil for 5 minutes. If you want thicken the gravy, add a little chana flour disdolved in water.
- Decorate with chopped coriander leaves. For serving place the pattice in the serving dish. Add ragada over in it. Add all chutneys.
- Decorate with grated beetroots. Also add finely chopped 1 onion.
Further Details
Fresh Punjabi masala may be added to the ragada for better taste.
