Pani puri khakhara
[Makes 15-20]
Ingredients
- 150 grams whole wheat flour
- 4 table spoons oil
- 1-2 table spoons ghee
- 1-2 table spoon Pani puri masala
- 1/2 tea spoon black paper powder
- 1 green chilli
- 20 grams coriander leaves
- 30 grams mint leaves
- 1 tea spoon lemon juice
- salt to taste
Instructions
- Make paste from green chilli, coriander leaves,mint leaves and lemon juice. Heat 4 table spoon oil and roast the paste. Cook till the water evaporates. Cool it.
- Mix all the ingredients and paste.Knead it by adding water little by little. Don't make it too loose. Cover and keep aside for 30 minutes.
- Take a small ball of dough like lemon size and roll out into as thin a circle as possible(wafer thin ). You can take dust lightly, if necessary, with rice flour to prevent it from sticking.
- Heat the iron griddle. Half roast the roti with low heat on both sides. . Spread ghee on it. Sprinkle pani puri masala. Do another roti like this way. Put aside till it become cool.
- Press down with kitchen towel of every part of cooked circle till it becomes crispy.(edge to circle). Now turn the khakhra over and repeat with the other side patiently.

- When cool, store in an airtight container. You can brush butter instead of ghee as per your requirement.
