Pani Puri
Ingredients for puri
Ingredients For masala
- 600 grams potatoes
- 200 grams chana
- 3-4 table spoons coriander leaves
- dates chutney
Ingredients For Dry Masala
- 4 to 5 pieces cinnamon
- 8 to 10 cloves
- ½ tea spoon cumin seeds
- 8 to 10 pepper corns
- 1 tea spoon garam masala
- 1 tea spoon red chilli powder
- 1 tea spoon omun
Ingredients For Paste to make water(pani)
- A small piece ginger
- 3 to 4 green chillies 3 to 4table spoons coriander leaves
Instructions
- Mix sooji, maida, baking powder and enough water to knead a soft dough.
- cover and put aside with wet cloth for 15-20 minutes.
- Make small sized balls.
- roll out balls(small puri) with the help of maida.
- Heat oil in a pan and deep fry puris till very light brown and crisp.
- Store in an airtight container when cool.
- Grind all the ingredients of dry masala to a fine powder.
- Blenderise all the ingredients for making the paste.
- Drain in a paper towel for a while to dry out the oil.
- Add the paste to chillied water. Leave it for 2-4 hours. Then add the dry masala, black salt, salt and lime juice. Strain and refrigerate it.
- Boil the potatoes. Add salt to chana and boil them. Mix both together and add some dry masala, 3 -4 table spoons coriander leaves(finely chopped) and salt to it.
- Prepare sweet chutney.
- Sprouted mung or green mung can also be used.
- While serving add chana, potato, curds, sev and chutney in the puri. Serve puri with the chilled (water) prepared.

Variation
- Finely chopped onions, hot ragada, spicy bundi, dahiwada can also be added to the puri.
