Limewada
Ingredients
- 750 grams potatoes
- grams tuver or peas (fresh)
- Oil
- 1 tea spoon ginger-chilli paste
- ¼ cup finely chopped coriander leaves
- 1/2 lime
- 1 tea spoon sugar
- 1 tea spoon garam masala
- 1 tea spoon sesame seeds
- 150 grams chana flour
- 200 grams curds
- Khajur chutney
- Coriander chutney
- 1 table spoon roasted cumin seeds
- Red chilli powder
- Red, green, yellow edible colour
- Fresh coconut (grated)
- Salt to taste
Instructions
- Boil, peel and grate 400 grams of potatoes. Grate the remaining 350 grams potatoes. Soak in water. Strain after some time and spread on a cloth to dry.
- Divide this into four parts. Colour each part with red, yellow and green colours. Leave the fourth part white.
- Heat oil in a vessel. Fry them on slow flame. Mix all four together.
- Crush fresh beans or peas and make kachori masala.
- Make very small balls. Add salt to the potatoes mixture. Stuff the kachori masala in the center.
- Prepare a thin batter of chana flour and salt. Dip the potatowadas in the batter.
- Add beaten curds, green and red chutney, roasted and powdered cumin seeds, salt and red chilli powder.
- Decorate with fried chips (coloured), coriander leaves and grated fresh coconut.
