Khichdo

Ingredients

  • 400 grams wheat
  • 150 grams tur dal
  • 30 grams dates (dry) (cut into four pieces)
  • grams peanuts
  • coconuts(dry) (cut into long chips)
  • 8 to 10 kajus (cashew nuts)
  • 50 grams val beans
  • 50 grams fresh tuver beans
  • 50 grams green peas
  • A pinch of soda
  • 1 ½ table spoons raisins
  • Cloves-cinnamon powder
  • Sugar and jaggery to taste
  • Ghee accordingly
  • 8 to 10 almonds
  • ½ nutmeg
  • 1 tea spoon cardamom powder
  • A pinch saffron strands
  • 2 table spoons ginger-chilli paste
  • Oil
  • green chillies
  • ½ tea spoon mustard seeds
  • 1 table spoon red chilli powder
  • ½ tea spoon turmeric powder
  • ¼ tea spoon asafetida
  • ¼ cup finely chopped coriander leaves
  • Salt to taste

Instructions

  • Soak wheat for 6 to 8 hours in sufficient amount of water. Then wash and stain it. Boil in cooker or in a vessel. Grease the vessel, add water, when the water starts boiling, add wheat grains. Stir constantly.
  • Wash tur dal.
  • Add dates and peanuts and boil.
  • Boil tuver and val beans in pressure cooker with out the weight on. Add little citric acid and salt to it, to maintain its colour.
  • Mix wheat grains , dal and beans. Add cashewnuts, raisins, ½ tea spoon cloves- cinnamon powder.
  • Remove the desired quantity of mixture to make sweet khichada.
  • Add sugar and jaggery to it.add saffron(dissolved in water), nutmeg powder, cardamom powder. Heat little ghee, add clove-cinnamon powder(2 to 3 cinnamon and 4 to 5 cloves) to it. Add this seasoning to the khichado.
  • For spicy khichado add salt chillies and ginger paste.
  • Heat oil for seasoning and add kashmire chilles,(whole), mustard seeds, turmeric powder, asafetida and cloves-cinnamon powder(2 to 3 cinnamon and 4 to 5 cloves). Khichado should be semi liquid. Decorate with finely chopped coriander leaves.
  • 1 kg wheat khichado can serves 12 persons.
