Khaman
Ingredients
- 250 grams chana flour
- 1 tea spoon ginger chilli paste
- A pinch of asafoetidqa
- 2 tea spoons oil
- 1 ½ tea spoons citric acid
- 1 tea spoon soda bi carb
- 1 tea spoon mustard seeds
- 1 tea spoon sesame seeds
- 5 green chillies(cut lengthwise)
- tea spoons sugar
- table spoons kajus (cashewnuts)
- table spoons coriander leaves
- table spoons grated coconut
- Salt to taste
Instructions
- Add salt, ginger- chilli paste, asafoetida and oil to gram flour and make batter. Add a little citric acid to it.
- Boil water in big container. Place the sieve at the bottom.place a steel dish on it. Grease the dish.
- Add soda–bi-carb and mix well. Mix in one direction only. Pour the batter in the dish. Cover the container with a big dish or cloth so the vapours Do not escape. Put some weight on the dish.
- For vaghar heat oil in a vessel. Add mustard seeds,green chillies, 1 ½ cups water, sugar, pieces of kaju.
- Boil the water.
- When the khaman is done remove and cool it. Cut into pieces. Add the seasoning. Decorate with chopped coriander and grated coconut.
