Methi khakhara
[Makes 15-20]
Ingredients
- 3 cups whole wheat flour
- 4 table spoons oil
- 4 table spoon kasuri methi (dried fenugreek leaves)
- 1 table spoon (ajwain) omam seeds
- 2 table spoon sesame seeds
- 2 table spoon chilli powder
- 1 table spoon cumin powder
- salt to taste
Instructions
- Mix all the ingredients and knead it by adding water little by little. Don't make it too loose. Cover and keep aside for 30 minutes.
- Take a small ball of dough like lemon size and roll out into as thin a circle as possible(wafer thin ). You can take dust lightly, if necessary, with whole wheat flour to prevent it from sticking.
- Heat the iron griddle. Roast the roti with low heat on both sides till it becomes light brown.
- Press down with kitchen towel of every part of cooked circle till it becomes crispy. Now turn the khakhra over and repeat with the other side patiently.
- When cool, store in an airtight container. You can brush ghee of butter as per your requirement.
Further Details
We can sprinkle chat masala powder and special khakhara masala.
We can also eat it plain, with tea, or serve with a variety of dips or salsas, sweet and sour chutneys
