Jeera mari khakhara
[Makes 15-20]
Ingredients
- 150 grams whole wheat flour
- 4 table spoons oil
- 1/2 tea spoon black pepper powder
- 1 tea spoon cumin seeds
- salt to taste
- 3-4 table spoons ghee
- 3 table spoon rice flour
- 1 table spoon cumin seeds powder
Instructions
- Mix wheat flour,cumin seeds ( rub between palm),black pepper, salt and oil .
- Knead it by adding water little by little. Don't make it too loose. Cover and keep aside for 30 minutes.
- Mix ghee and rice flour and stir it till it becomes puffy.make paste
- Take a big ball from the dough and roll out big roti from it. You can take dust lightly. Spread 1 table spoon paste on the roti evenly (for softening). Sprinkle rice flour on it and make roll. And roll out again. And again make roll.
- Make balls from it. Knead each ball again. Roll out into as thin a circle as possible .You can take dust lightly, if necessary, with rice flour to prevent it from sticking.
- Heat the iron griddle. Half roast the roti with low heat on both sides. Spread ghee on it. Do another roti like this way. Put aside till it become cool.
- Press down with kitchen towel of every part of cooked circle till it becomes crispy.(edge to circle). Now turn the khakhra over and repeat with the other side patiently.

- When cool, store in an airtight container. You can brush butter instead of ghee as per your requirement.
