Ingredients For Kachori
1) 250 grams fresh beans (tuver)
2) A small piece of ginger
3) 8 to 10 green chillies
4) Oil accordingly
5) ½ tea spoon muster seeds
6) 1 tea spoon sesame seeds
7) A pinch soda
8) 1 potato
9) 50 gram rice flakes
10) A few coriander leaves
11) ½ tea spoon citric acid
12) 2 tea spoons sugar
13) 1 tea spoon garam masala
14) A few kajus and raisins
15) 300 grams wheat flour or maida
16) Seasame seeds
17) 1 tea spoons powdered sugar
18) ½ tea spoon lime juice
19) Salt to taste

Method For Kachori
1) Crush the fresh beans lightly. Grind ginger and chillies.
2) Heat enough oil in a kadhai and add mustard seeds, sesame seeds, ginger-chilli paste and fresh beans. Add salt. Fry for some time. Dissolve soda into water
3) If need add boiled and mashed potatoes. Add it to the mixture. Washed rice flakes also can be added. Fry for some time .When cooked properly, add all the masalas. If fresh beans are less than the proportion of potatoes can be increased.
4) Knead the dough made of either wheat flour only or maid and  little amount of wheat flour . To this add 1 tea spoon of powdered sugar, 2 tea spoons oil , and some lime juice .knead The dough like that used to make puries. Divide the dough into small portion.
5) Roll out each portion into a puri fill in the stuffing. Shape it again into a ball. Fry the kachoris.

Variation For Kachori
Green peas, cucumber, tendali can be also crushed and added for stuffing. Roast peas, cucumber and tendali before adding, them to the fresh beans.
Mung dal and green peas kachoris also tastes good.

Dahi Kachori

For new Variation in Kachori you can make Dahi kachori. you need beaten curd (Dahi). After making balls for kachori.  Pour Kachori with Green Chutyney, beaten Curd, Sweet Chutney, salt and chilly powder. IT will add new taste in Kachri.
