Biriyani is the moghlai dish. Vegetables, spices, yougert make it a rich rice dish. We can use this dish as main meal. There is a lot of difference of taste of Pulav and biriyani. When we make pulav, rice is cooked with vegetables; spices while in biriyani we are cooking it separate, then both are cooked in an oven in dry heat. Biriyani looks very colour full because of vegetables like carrot, capsicum, beans, peas, potatoes, onion. Saffron gives it an exotic touch. Dry fruits are made it royal. Sweet Bundi

[Serves 4]

Ingredients

  • 1 cup chanaflour (very fine)
  • 2 table spoons coarse chana flour
  • 150 grams ghee, a few raisins
  • 200 grams sugar
  • A few strands kesar and few drops yellow food colour
  • 1 tea spoon cardamom powder
  • A few raisins

Instructions

  • Mix 2 table spoons chana flour, 1 cup fine chana flour and 1 tea spoon ghee. Prepare a batter with water.
  • It should be little watery keep it aside for sometime. If the batter is too thick add extra water. If it is too thin, extra flour may be added. Melt ghee in a fry pan. When it is hot enough fry the bundi. Use a spoon and a frying spoon to make bundi’s.
  • Use the spoon to place the batter on the frying spoon. But the spoon should not touch the frying spoon.
  • After each time clean the frying spoon.
  • Prepare the sugar syrup by dissolving sugar in enough water. Make two threads sugar syrup. For testing the syrup place a drop in a plate, if it spread’s lightly then the syrup is ready.
  • Add kesar, colour and cardamom powder. If desired raisins may be added to the syrup.
  • Add the bundi to a little warm sugar syrup. Two or three lots of bundi may be added at a time.
  • If you find the bundi to be very sweet then put the bundi for a little less time in the syrup. Place the plate of bundi little tiled so that the extra sugar syrup separates out.
  • Stir the bundi properly to prevent sticking. Ladoo’s can also made from this bundi.
