Vegetable Biriyani

Biriyani is the moghlai dish. Vegetables, spices, yougert make it a rich rice dish. We can use this dish as main meal. There is a lot of difference of taste of Pulav and biriyani. When we make pulav, rice is cooked with vegetables; spices while in biriyani we are cooking it separate, then both are cooked in an oven in dry heat. Biriyani looks very colour full because of vegetables like carrot, capsicum, beans, peas, potatoes, onion. Saffron gives it an exotic touch. Dry fruits are made it royal. Plain Mattha
[Serves 3 to 4]
Ingredients
- 1 kg curd (not sour)
- 200 grams sugar
- A little cardamom powder
Instructions
- Tie the curd in a thin muslin cloth and let the water drain off. From 1 kg of curds 400 grams of ‘chakka’ would be obtained.
- It the curds are thick, more chakka would be formed.
- Sieve the thickened curds and sugar together through sieve or a kitchen master mix properly. Add the cardamom powder and refrigerate it.
- We can obtain approximately 550 grams mattha from this.
- The amount of sugar is half the amount of the ‘chakka’. This, almost 550 grams matha would be prepared. The proportions of sugar may differ according to requirement and tests.
