Vegetable Biriyani

Biriyani is the moghlai dish. Vegetables, spices, yougert make it a rich rice dish. We can use this dish as main meal. There is a lot of difference of taste of Pulav and biriyani. When we make pulav, rice is cooked with vegetables; spices while in biriyani we are cooking it separate, then both are cooked in an oven in dry heat. Biriyani looks very colour full because of vegetables like carrot, capsicum, beans, peas, potatoes, onion. Saffron gives it an exotic touch. Dry fruits are made it royal. Kajukatri
[Makes 20 to 25 pieces]
Ingredients
- 200 grams (2 cup) kaju powder
- 1 cup powdered sugar
- ½ cup milk
- A little cardamom powder
- 1 tea spoon ghee
- Silver foil for decoration
Instructions
- Apply a little ghee inside the vessel and mix milk and powdered sugar. Boil it.
- After it boils for one or two times add the kaju and the cardamom powder. When it is thick enough like a dough, remove it from the flame. Add 1 tea spoon of ghee to the dough.
- Apply a little ghee to a plate and the rolling pin. Roll out the dough into a thick roti.
- When cool cut into small pieces. Instead of kaju, badam may be also used to make badamkatri. Decorate it with silver foil.
Ingredients For Kajukatri
- 100 grams kaju
- 100 grams sugar
- 1 tea spoon ghee
- Silver foil for decoration
Instructions
- Make sugar syrup with sugar and enough water. Add little milk and remove the dirt of the sugar. Make three thread sugar syrup. Boil till it is thick, like a drop.
- Powdered kaju and add it to the sugar syrup. Mix properly, when it is thick enough like a dough. Remove it from the flame.
- Add 1 tea spoon ghee to the dough. Roll out into a roti between two plastic. Decorate with silver foil. Cut into small pieces.
