Vegetable Biriyani

Biriyani is the moghlai dish. Vegetables, spices, yougert make it a rich rice dish. We can use this dish as main meal. There is a lot of difference of taste of Pulav and biriyani. When we make pulav, rice is cooked with vegetables; spices while in biriyani we are cooking it separate, then both are cooked in an oven in dry heat. Biriyani looks very colour full because of vegetables like carrot, capsicum, beans, peas, potatoes, onion. Saffron gives it an exotic touch. Dry fruits are made it royal. Kaju-pista or Pista Pan
[Makes 18 to 20 pans]
Ingredients
- 250 grams kaju
- 125 grams sugar
- 2 tea spoons ghee
- 50 grams pista
- 50 grams mawa (used for barfi making)
- 25 grams sugar
- A few cardamom seeds (powdered)
- A little of icing sugar
- A few drops of edible green colour
- A little nutmeg powder
- Silver foil for decoration
Instructions
- Powder the kajus. Make sugar syrup from 125 grams sugar and water. Add a little milk to remove dirt from the sugar. Boil till it is thick like a drop. Make three threads sugar syrup.
- Add the kaju powder. Mix properly. When thick enough like a dough, remove it from the fire and add 1 tea spoon of ghee. Mix properly.
- Powder the pistas. Roast the mawa in 1 tea spoon ghee.
- Make sugar syrup using 25 grams sugar. Add a little milk to remove the dirt from sugar. Boil till it is thick like a drop. Make three threads sugar syrup.
- Add pista powder, cardamom powder, icing sugar, mawa, nutmeg powder, few drops of edible dark green colour.
- Take a small portion of the kaju mawa and roll it between two plastics into a small puri.
- Cut it into two parts. Put the pista filling on one part. Shape it like a pan (samosa).
- Repeat with other part.
- Decorate it pan with silver foil. Also decorate it with a small pista piece.
