In ancient time nankhatai had been made with the use of thali with fire coal. Nowadays we are mostly using microwave. Nan Khatai are so easy to prepare and will take very little of your time. You can serve it on a tea party or kitty party.

Kaju Biscuits

Ingredients

  • ½ cup of cashewnut powder.
  • 1 cup ghee
  • 1 tea spoon baking powder
  • 2 ½ cups maida
  • ½ cup rawa
  • 1 cup desiccated coconut
  • 1 tea spoon nutmeg powder
  • 1 tea spoon cardamom powder
  • 1 ¼ cups powdered sugar (sieved)

Instructions

  • Cream the ghee very well until light and creamy. Add 1 tea spoon baking powder and all other ingredients.
  • Add a little milk and mix well. A little milk makes them on a well greased baking tin.
  • Bake in a hot oven for 15 to 20 minutes at 180 °c or 350° f. cool the biscuits.

Further Details

Do not add a lot of milk or the biscuits would become hard.

The proportion of desiccated cashewnut powder can be increased if desired.

Chocolate biscuits: substitute desiccated coconut with sufficient quantity of cocoa powder.
