Biriyani is the moghlai dish. Vegetables, spices, yougert make it a rich rice dish. We can use this dish as main meal. There is a lot of difference of taste of Pulav and biriyani. When we make pulav, rice is cooked with vegetables; spices while in biriyani we are cooking it separate, then both are cooked in an oven in dry heat. Biriyani looks very colour full because of vegetables like carrot, capsicum, beans, peas, potatoes, onion. Saffron gives it an exotic touch. Dry fruits are made it royal. Kaju-Anjeer (khajur) Balls

[Makes 20 to 25 balls]

Ingredients

  • 250 grams khajur (dates)
  • 100 grams anjeer (figs)
  • A little ghee
  • ¼ cup milk
  • 1 tea spoon sugar
  • A little khus khus (opium seeds)
  • 100 grams mawa
  • 125 grams kaju powder
  • A few cardamom seeds (powdered)
  • A little arrowroot flour or milk powder
  • Silver foil (warakha)

Instructions

  • Wash the khajur and the figs. Remove seeds from the khajur and chop both of the dry fruits into small pieces.
  • Heat a little ghee in a pan and roast the khajur and figs. When it becomes soft, add milk, 1 tea spoon of sugar and a little khus khus.
  • When cooked properly, remove the mixture from the flame and allow it to cool. Grind it with a hand-mixer.
  • Roast the mawa with little ghee.
  • Make syrup with sugar and milk. When the sugar syrup is ready, remove it from Flame. Add  the kaju powder, mawa and cardamom powder, if it is soft, a little arrowroot flour or milk powder may be added. Make balls of khajur and figs mixture. Divide the kaju mawa into small portions.
  • Take each portion and stuff the khajur, anjeer balls in the centre. Make a ball again.
  • Decorate with silver foil. If the balls are very soft, refrigerate them.
