Biriyani is the moghlai dish. Vegetables, spices, yougert make it a rich rice dish. We can use this dish as main meal. There is a lot of difference of taste of Pulav and biriyani. When we make pulav, rice is cooked with vegetables; spices while in biriyani we are cooking it separate, then both are cooked in an oven in dry heat. Biriyani looks very colour full because of vegetables like carrot, capsicum, beans, peas, potatoes, onion. Saffron gives it an exotic touch. Dry fruits are made it royal. Try this recipe and enjoy luscious dish.

Jalebi

[For 4 persons]

Ingredients

  • 1 cup maida
  • 1 tea spoon curd
  • 4 tea spoons gram flour
  • A pinch of soda
  • A little ghee
  • cup sugar
  • A few strands of kesar
  • A few drops of food colour

Instructions

  • Make batter of maida and curd. Leave it for 24 hours. In winters leave it for 1½ days before. The batter should not be too thin.
  • Add chana flour and soda. Fill the batter in a special jalebi glass having a hole at the bottom.
  • Heat the ghee in frying pan. When hot make jalebi in circular shape starting from outside and moving towards center. If the glass is full of batter, thick jalebies are formed would be formed.
  • Make 1½ to 2 threads thick sugar syrup. Put the jalebies in it.
  • Let them soak the sugar syrup till another lot of fried jalebies ready. Remove the first of jalebies from the sugar syrup. Keep the sugar syrup hot by keeping it on a slow flame. It it thickens, a little water may be added. Remove the syrup from fire.

Note: For 100 grams maida use 200 grams of sugar. For making batter about 130 ml of water can be used.

A jalebi maker can be used for making jalebies. Do not store it in closed container of the jalebies would lose their crispness and soften.
