Vegetable Biriyani

Biriyani is the moghlai dish. Vegetables, spices, yougert make it a rich rice dish. We can use this dish as main meal. There is a lot of difference of taste of Pulav and biriyani. When we make pulav, rice is cooked with vegetables; spices while in biriyani we are cooking it separate, then both are cooked in an oven in dry heat. Biriyani looks very colour full because of vegetables like carrot, capsicum, beans, peas, potatoes, onion. Saffron gives it an exotic touch. Dry fruits are made it royal. Try this recipe and enjoy luscious dish.

Gundar Pak(dry gum pak)
Ingredients
- 100 grams gum (pounded)
- 100 grams ghee
- 1 litter milk
- 200 grams sugar
- A few almonds (pounded)
- And a little khus khus (pounded)
- ½ katori dry coconut(grated)
- 100 grams magatari seeds
- 1 large spoon dry ginger powder
- 1 large spoon ganthoda powder
- A large spoon ganthoda powder (pepper root)
Instructions
- Heat the ghee in fry pan. If the gum is soaked in water before using less ghee is required.
- Add the gum to the heated ghee. Stir constantly. Add more ghee if required. Roast the gum till it becomes light brown in colour. Add milk slowly and stir constantly. Add sugar. Cook till all milk evaporates.
- Add khus khus , almonds and coconut. When it becomes thick enough, add the remaining ingredients. Store in a container.
Further details
Note: this is very good for health particularly after delivery. It is eaten one month after the delivery. After delivery grind gum to small pieces and soak in ghee and refrigerate.
It is also very good, for everybody in winter. For that it can be used immediately after soaking or also without soaking.
