Vegetable Biriyani

Biriyani is the moghlai dish. Vegetables, spices, yougert make it a rich rice dish. We can use this dish as main meal. There is a lot of difference of taste of Pulav and biriyani. When we make pulav, rice is cooked with vegetables; spices while in biriyani we are cooking it separate, then both are cooked in an oven in dry heat. Biriyani looks very colour full because of vegetables like carrot, capsicum, beans, peas, potatoes, onion. Saffron gives it an exotic touch. Dry fruits are made it royal. Try this recipe and enjoy luscious dish.

Gulabjamun
[Makes 35 to 40 Gulabjamuns]
Ingredients
- 250 grams gulabjamun khoya (mawa)
- 50 grams rawa
- 2 table spoons maida
- A pinch of soda-bi-carb
- A little few cardamom powder
- Ghee for frying
- 400 grams sugar
- A few drops rose essence
- A few rose petals for decoration
Instructions
- Soak the rawa in a little milk. Grate the mawa.
- Mix the maida, mawa, soaked rawa, soda-bi-carb and cardamom powder. Knead well. Divide the dough into small balls.
- Fry the balls on a low flame stirring them constantly for even browning. See that the balls do not crack. If they crack, add a little maida.
- For preparing sugar syrup add water to sugar and make a half thread sugar syrup. For the syrup after the sugar dissolves in the water, boil the mixture for a few minutes. The syrup is ready.
- Add the balls when they cool down completely. After adding all the balls to the syrup boil it for 5 minutes. Then add rose essence. Rose petals also may be added for decoration.
- After 5 to 8 hours delicious gulabjamuns are ready. It requires 5 to 8 hours for the jamuns to absorb the syrup completely.
Further details
Instead of using 50 grams rawa, 50 grams of maida may be used for making good gulabjamuns.
