Vegetable Biriyani

Biriyani is the moghlai dish. Vegetables, spices, yougert make it a rich rice dish. We can use this dish as main meal. There is a lot of difference of taste of Pulav and biriyani. When we make pulav, rice is cooked with vegetables; spices while in biriyani we are cooking it separate, then both are cooked in an oven in dry heat. Biriyani looks very colour full because of vegetables like carrot, capsicum, beans, peas, potatoes, onion. Saffron gives it an exotic touch. Dry fruits are made it royal. Ghughara
[Serves 6 to 7]
Ingredients
- 125 grams rawa
- 125 grams ghee
- A few cardamom seeds
- 150 grams powdered sugar
- A little khuskhus (opium seeds
- 250 grams maida
Instructions
- Roast the rawa in ghee till it becomes brown and cool it.
- Add the cardamom powder, khus khus and powdered sugar to the rawa.
- Add a little ghee to the maida. Rub it well. Knead the dough using cold water. Divide the dough into small balls. Take each ball of the dough and roll it into a small ‘puri’. Put a small portion of the prepared mixture in it. Cover the mixture by drawing up the edges of the puri towards, each other press the edges lightly. if the edges do not stick then use a little milk for sticking it.
- Make the ghugharas in various shapes and fry them in ghee.
- Measure the sugar a little more amount than rawa (use 125 grams ghee for adding and frying).
Further details
1.Instead of rawa, mawa can also be used. Roast the mawa for a few minutes. Remove it from the flame. Add cardamom, raisins and powdered sugar.
Cool it.
Roll out puris from maida dough (knead the dough with cold water). Fill the mixture in the center. Cover it by drawing up the edges of the puri towards each other. Press the edges lightly. Decorate the edges using a fork of shape it like ghughara.
2.you can add desiccated coconut(crushed) in the filling.measure the sugar a little more than rava+coconut.
3.For religious purpose milk can be used instead of water to knead the dough.
