Biriyani is the moghlai dish. Vegetables, spices, yougert make it a rich rice dish. We can use this dish as main meal. There is a lot of difference of taste of Pulav and biriyani. When we make pulav, rice is cooked with vegetables; spices while in biriyani we are cooking it separate, then both are cooked in an oven in dry heat. Biriyani looks very colour full because of vegetables like carrot, capsicum, beans, peas, potatoes, onion. Saffron gives it an exotic touch. Dry fruits are made it royal. Ghari

[Serves 3 to 4]

Ingredients

  • 100 grams maida
  • A little pure ghee for the puri
  • 10 grams badam-pista powder(optional)
  • A little cardamom, mace (javantri)
  • And nutmeg powder
  • 100 grams mawa
  • 60 grams powdered sugar
  • Dalda ghee for frying
  • 10 grams powdered sugar,
  • A little of pure ghee and a little of dalda ghee to pure on the ghari.

Instructions

  • Add enough ghee to the maida.Rub well. Knead the dough using cold water. Divide the dough into small portions. Make a puri from each portion.
  • Mix badam-pista powder, milk powder, cardamom powder, nutmeg and mace powder.
  • Roast the mawa on slow flame. When ghee separates add almonds, pista, nutmeg, cardamom and mace powder. Cook for 1 minute.
  • Cool and add powdered sugar.
  • Cut the puri into a square shape. Stuff the mawa mixture in the puri. Cover the mixture by drawing up the edges towards each other. Water may be used to make the edges stick with each other.
  • Fry them in ghee. Cool them. Heat some dalda ghee and a little of pure ghee. Remove it from the flame and add powdered sugar. Dip the ghari in this mixture for 2-3 times and put it in a thali.
  • If a thicker layer is desired than put the ghari in the refrigerator and then again dip it in ghee after some time.
