Eggless Indian biscuit which is serve with tea. They are most like to be flavoured with some of the usual ingredients like- green cardamom, saffron, pista. In ancient time nankhatai had been made with the use of thali with fire coal. Nowadays we are mostly using microwave. Nan Khatai are so easy to prepare and will take very little of your time. You can serve it on a tea party or kitty party.

Gujrati Handvo
Gujrati Handvo Gujrati Handvo is typical gujrati recipe and well known in all over india as well as in world where NRG are living. Handvo , Dhokla and Khaman is trademark gujrati recipes.
Ingredients
- 2 cups rice
- 1 cup tur dal
- ¼ cup chana dal
- ¼ cup urad dal
- 1 cup curds
- 2 table spoons wheat flour (coarse)
- 200 grams bottle gourd (dudhi)
- 2 tea spoons ginger –chilli paste
- 2 table spoons methiya masala (pickle masala)
- 2 table spoons jaggery
- 1 tea spoon red chilli powder
- 10 cloves garlic
- ½ tea spoon turmeric powder
- 2 tea spoons pickle oil
- Oil
- A pinch soda
- 1 tea spoon mustard seeds
- 2 tea spoons sesame seeds
- Salt to taste
Instructions
- Wash rice and all dals, dry them and grind them into coarse flour.
- Or
- Soak rice and all dals for a few hours. Blenderise them. Add curds to it while grinding.
- Add 3 table spoons of curds to flour. Add all the masalas. Prepare a batter with Luke warm water. Add grated bottle gourd. In winter, use a little more amount of curds. Keep the mixture aside for 6 hours.
- In summer add less curds and keep aside for 4 hours.
- While making handva heat a mixture of 2 table spoons oil, water and soda. Grease the cooker and put the batter in it. Add seasoning of oil , mustard seeds and sesame seeds.
- Keep the gas on high flame for 5 to 10 minutes. Then keep the gas on slow flame for 30 to 35 minutes.
- Handava can be prepared in a non stick pan. When done from one side turn it upside down. It can be prepared in ordinary oven or a microwave oven
Further Details
Handvo can be eat with Oil, garlic chutney, mint (pudina) chutney.
